Salsa Recipe
OMG…Two recipes in one week!! Just a Word of caution…..once you make this salsa, you may find that nothing else will do! When I go to Mexican restaurants these days, I always find myself disappointed because mine is so much better!! = ) The ONLY place that has better salsa than this (in my humble opinion) is Chili’s. = )
Makes 8 Cups Salsa
Ingredients:
2 Cans Whole or Diced Tomatoes (do not drain)
1/2 cup yellow onion
1tbsp Sugar
2 to 2.5 tbsp chopped (or minced) Jalapenos
1tsp Cumin
1 to 2 tsp Garlic Salt
2 Cans Rotel (Normal or Hot) <– drain liquid
Directions:
1. Chop Onion. Set Aside
2. Put whole tomatoes, cumin, garlic, sugar & jalapeno into food processor. Make sure whole tomatoes get chopped well.
3. Put drained Rotel & Garlic into bowl. Add tomato mixture. Use a spoon and mix well.
4. Eat.
Depending on how chunky you like your salsa, you can get diced tomatores and skip the food processor all together! Just a word of caution about the food processor: If you mix everything together in the salsa and process really fine….it won’t taste as good. I don’t understand it myself, but the flavor changes!
Take it and make it your own! Add Cilantro, add MORE cumin, or more jalapeno! A co-worker of mine used minced garlic instead of garlic salt and she loves it!
Also about the Rotel…. I use the Normal and I’m good to go. While I was pregnant I used one mild and one normal. My husband LOVES the hot rotel, but not everyone can handle that. = )

Thanks for the salsa recipe…looks really interesting but can you explain what Rotel is? I did a search for it but nothing came up with regard to food….Ta…
